Breakfast for the Win

Last night, I did not get any sleep. I struggled through my morning cardio and it took everything in me not to throw my cat out after he decided it was play time at 3am and getting sick time when I was in the shower.  You could say it was a rough start to my day.  But it’s Thursday {my favorite day of the week in case you didn’t know!} and I wasn’t going to let that be the end of it.

So, I took my normal oat bran & egg white breakfast and I turned it into an incredible omelette & waffles.  Talk about success!

Breakfast always makes everything better don’t you think?

Omelette: 1/2 c. egg whites with mixed diced veggies, topped with all natural salsa

Waffles: 1/2 c. egg whites, 1/2 c. oat bran, dash of cinnamon & a couple drops of liquid vanilla stevia, splash of almond milk or water, plus a little baking powder; blend together with a Magic Bullet & cook in waffle maker or in pan on low heat for pancakes!  Top with Sugar Free Triple Berry Spread.
