This is one of those recipes I make so often, it surprised me to realize I hadn’t yet shared it. It is so simple, and such a perfectly nutritious staple to have in your back pocket. I mean, who doesn’t have almost-too-ripe bananas sitting around half the time? Or frozen bananas just ready to be used?!
Even if you’re not one to have bananas on hand, this is one recipe you’ll want to go out and get them for.
As you probably know by now, when it comes to baking I really like to stick to almond flour, oat flour or sometimes coconut flour. But sometimes, I like to get a little crazy – and not use flour at all. Gsp! Watch out folks, it’s getting wild up in here!
In this case, almond butter and oat bran {or partially ground oats if you’d rather} make a fantastic base to these muffins.
Ingredients
1/2 c. almond butter
1/2 c. oats bran (oats would work as well)
2 tbs. ground flax seed
2 medium mashed bananas
1/4 c. honey
2 eggs
1 tsp vanilla
1/2 tsp. baking soda
1/4 tsp. sea salt
1/2 tsp. cinnamon
1/2 c. chopped walnuts
Directions
Preheat oven to 350 degrees. Grease muffin tin or use liners.
Combine all wet ingredients – including banana, eggs, and vanilla – in a food processor or blender until smooth. Add almond butter and mix briefly before adding all remaining dry ingredients (less walnuts); mix until just combined. Hand stir in walnuts or sprinkle on top once evenly portioned in muffin tins, whichever you prefer.
Bake for 18-20 mins, or until a toothpick comes out clean.
For best results, refrigerate once cooled or freeze to always have on hand! Enjoy 1-2 Flourless Banana Nut Muffins for breakfast or as a quick snack.
